Chocolate creamy goodness that is healthier than your traditional mousse. Need I say more...
Ingredients 1 large ripe avocado 3 tbsp cacao powder 1 can coconut milk (or use any milk you have eg almond milk- just use less- around 1/2C) pinch of salt 1/4 tsp vanilla paste (or 1/2 tsp vanilla extract) sweetener of choice. Eg maple syrup, dates. I used 2 tbsp of monkfruit sweetener (this doesn't spike your blood sugars and is zero calorie)
Place all the ingredients in a blender and blend till smooth. Top with your favourite topping- eg. berries, seeds, coconut etc.
This mousse will keep in the fridge for up to 7 days.
TIP: put in small serving size dishes and then freeze them. They will keep frozen for two months.
