My beautiful sister in law shared this recipe with me recently. Its a game changer! So good for those days when you crave some chocolate! It can be eaten anytime of the day as breakfast, snack, or even a dessert as a choc self-sauce pudding substitute.
INGREDIENTS
1/2 cup of wholegrain oats
1/2 to 1 cup of milk of choice (I like coconut and almond milk)
1 Tbsp of cacao powder
1-2 tsp of sweetener of choice (I use maple syrup or monkfruit)
METHOD
1. Add the oats and cacao powder into a bowl and stir together.
2. Cover the dry mixture with milk and add your sweetener - stir again until the cacao powder has dissolved into the milk.
3. Place in the microwave in 1 min bursts, removing, stirring, and repeating; until the liquid has
absorbed and you have a chocolate pudding / porridge consistency (usually takes around 3-4 mins).
Serve with your favourite toppings and enjoy. My two favourite ways are to top it with coconut
yoghurt and freeze-dried raspberries or sliced banana, chopped pecans or walnuts and a tablespoon
of peanut butter.
