This is one of my favourite homemade cereals. I make it in a big enough batch so that it can last me a month. A dollop of yoghurt, a sprinkle of dried blueberry powder on top and your choice of milk...mmm so good!
Ingredients 1 C sunflower seeds 1 C pumpkin seeds 1 C coconut flakes 1 C dessicated coconut 1/2 C sliced almonds 1/2 C buckwheat 1 C almond flour 2 tsp cinnamon 1 tsp vanilla extract 6 tbsp coconut oil 3 tbsp honey or date syrup (I use a mix of both) 1/2 C goji berries
1. Preheat oven to 180C 2. Mix all the dry ingredients in a large bowl 3. In pot heat coconut oil, honey, and vanilla, until all blended and melted together 4. Pour syrup mix into seed bowl and mix till well coated. 5. Pour mix onto a lined baking tray or large roasting dish. 6. Bake for 10-15 minutes, turning a couple a times to ensure it gets even colour.
Note: I have added goji berries due to their many health benefits and low sugar content. However, you could replace with other alternatives or even leave out.
