One of my goals this lockdown is to inspire people to eat good healthy everyday food. It should be tasty, easy and fun! Here's another goodie...
For this dish you can have as a side dish or add a poached egg and have as a complete meal.
Ingredients Waxy potatoes, cut into even sizes 3 large handfuls of spinach, stems removed 2 tbsp olive oil 1 onion, chopped 1 garlic, finely chopped 1 tsp finely grated ginger 1 chilli, deseeded and chopped (increase or decrease to your tasting) 2 tsp garam masala (or could try curry powder) 2-3 tbsp of coconut cream/ milk or cream
Instructions 1. Boil potatoes until cooked, drain and set aside. 2. Rinse spinach and add to fry pan and cook in just the water that you rinsed spinach in. Once wilted drain and cool. Squeeze moisture out of spinach and chop. Set aside. 3. Place oil in pan and cook onions until soft. Then add garlic, ginger, chilli and garam masala. Cook for further 2 minutes. Add spuds and cook for another 2 minutes. 4. Add in spinach and cream and heat briefly.
