This meal is all the things I love about Croatian/ Mediterranean food. YUMMMMM!!
Ingredients
500g firm fish
Salt & pepper
3 tbsp extra virgin olive oil
1 onion, chopped
3 cloves of garlic, crushed
4 tbsp capers
1 can of cherry tomatoes or tomatoes (in summer you can use fresh tomatoes)
2 tsp dried oregano
1/2 cup pitted olives
1/2 cup roasted capsicum strips
Handful of chopped parsley
Lemon wedges to serve
Instructions
Season fish with salt and pepper and drizzle with half the oil, rubbing all over to coat the fish. Set aside.
Place a large frying pan over medium/ high heat and add remaining olive oil, onion, garlic and pinch of salt. Cook, stirring for 3 minutes, until onion is soft.
Turn down the heat and then add capers, tomatoes, and oregano. Cook until sauce is hot and reduced down.
Nestle in the fish, olives and roast capsciums. Cover pan with a lid and cook for 10 to 12 minutes until fish is just cooked.
Serve with parsley and squeeze of lemon.
