Oven Baked Fish with Lemon & Leeks

A beautiful dish that is a regular repeat in my house. The lemon just makes it pop!

This tastes better than it looks....my photography skills were a bit mediocre tonight!!

Ingredients 2 tbsp extra virgin olive oil 1 tbsp butter 4 -6 fillets of white fish 2 large leeks, chopped zest and juice of two lemons S&P

Instructions 1. In a pan cook leeks in 1 tbsp of olive oil and the butter. Add zest and juice of one lemon. Cook until soft. 2. Line a baking dish with tin foil and place leeks in. Then add the fish on top and add remaining lemon juice and zest. Drizzle with a little more olive oil and sprinkle with S&P. Cover with layer of tinfoil. 3. Bake 180c for 15 minutes (or until fish is just cooked through).

Tips: You can add fennel to the leeks to make this even yummier.
