Can we seriously just push the reset button? Not quite what I had planned this year! Time to have a break from it all, switch the news off and get back into things that keep me sane and happy; cooking and eating :-)
And, I might as well kill two birds with one stone by making a dish that is going to keep our immune systems humming. This Mediterranean style dish can be made with any veggies you have on hand. Add LOTS of garlic to boost your immunity.
Here is how I made it...super simple...
Ingredients 2 capsicums, quartered and de-seeded 2 small red onions, quartered 1 cup of cherry tomatoes 4 small courgette, thinly sliced lengthwise 1/4 c pitted olives 6 garlic, crushed 2 tbsp of olive oil 1 packet of halloumi (or feta) big handful of chopped herbs (I used thyme, parsley and basil) salt and pepper
Instructions 1. Preheat oven to 180C 2. Throw all the veggies in a large baking dish. Place halloumi in centre of dish. Then drizzle with olive oil, and sprinkle with herbs and S&P. 3. Bake for 30 mins or until or cooked.
