Its my hubbies birthday today and I wanted to make something a bit special. AND OMG IT WAS EPIC!! I jammed packed half the ocean in this baby...I really dont like getting a seafood chowder and having to search for some seafood in it!!!!
Ingredients 1 carrot, sliced 2 celery sticks, chopped 1 onion, diced 4 garlic cloves, crushed 2 large potatoes, cut into 1cm cubes 2 medium-sized fish fillets, diced into 1 cm slices 1 raw squid tube cut into 1 cm strips 1 cup raw scallops 10 raw mussels, still in their shells 1 cup raw prawns 2 cups clams 30 grams butter 2 bay leaves 1 teaspoon ground turmeric 70 grams GF flour 5 cups seafood stock 1/2 to 1 cup full cream S&P
Instructions
1. Heat large pot and add butter, carrots, celery, bay leaves and onion and cook until soft. Then add in garlic and cook for further minute. Then add turmeric and cook for 2 mins. 2. Stir in flour and cook for 2 minutes. Then add in stock and potatoes. Bring to boil. Then simmer for 10-15 minutes until potatoes are tender. 3. Add in cream and seafood and cook until all the seafood is cooked (approximately 10 minutes). Season with salt and pepper and get ready for one of the best taste sensations ever! NB/ Make sure the seafood stock you use is good quality- preferably home-made as this will make all the difference to the chowder.
