Having two kids that are very fussy eaters (I KNOW!!! How the hell did that happen to the biggest foodie ever!), has meant I have had to get creative with how I get their veggies in. This is one that I seem to get past the goalie. Give it a try its yummy!
Ingredients
1 1/2 cups fresh broccoli florets
1 large carrot roughly chopped
1 1/2 cups baby spinach loosely packed
2 stalks spring onions
1 clove garlic
3/4 tsp salt or to taste
1/4 tsp pepper or to taste
1 1/2 tsp Italian seasoning
1 pound ground beef
2 tbsp flax meal
Instructions
Preheat your oven to 200 degrees C
In a food processor, combine the broccoli, carrots, baby spinach, green onions, and garlic. Pulse until finely chopped.
Transfer the veggies to a large bowl and add the remaining ingredients. Time to get messy! Using your hands, mix the ingredients until everything is well blended.
Gently roll the meat into golfball size portions. Arrange the meatballs in a single layer in a large backing dish (you might need to use two baking dishes depending on how large they are).
Bake for 20-25 minutes or until meat is cooked through.
Enjoy with your favourite tomato sauce- I use my Roasted Tomato Soup.
